So much sourdough and not enough honey...

I have made so many sourdough loaves this week. I think that sourdough is so popular right now because it's fall, or it should be fall. It's 85 degrees today, but all I can think about is soup and chili and sourdough bread to go with all of it. I'm ready for fall, and I think everyone else is too. And it definitely shows. I have made half loaves of sourdough and bread bowls of sourdough and pumpkin sourdough and cheddar jalapeño sourdough, and currently I have an over proofed, been sitting in my fridge for days, mini loaf cooking in my oven (which might not end up tasting all that great). I think all of my clothes are covered in flour or dough (I should probably invest in an apron). I have little bits of dough under each of my nails no matter how much I scrub and wash or even get them done from the salon down the street (red sparkle done during a stolen hour in between kid activities and a 40th birthday party). My counters and sink have been scrubbed so many times I am pretty sure I could lick food off of it. I mean I won't, but I'm just saying that they are THAT clean. I wake up early before school to bake, and stay up late, like last night, to get the rest of the bread bowls finished. And I love it. Each bread might be made in the exact same way, but turns out different and delicious every time. And all I need to make it is some flour (so much flour), water, and salt... And it's easy! It's scary the first few times, but after a month of sourdough I feel like I ish have a handle on it. I've even taught a friend how to make it, and now she sends me all the sourdough TikToks that maybe someday I'll actually have time to watch. As long as I have flour and water and salt, I can continue making sourdough.
Honey... honey is a another thing. Those ladies worked their stingers off all spring and summer and shared that sweet, sweet nectar with us. We ate it, sold it, made some amazing food with it, including that delicious cinnamon creamed honey I can't keep stocked. And guess what... The honey is almost gone! We had one hive at my dad's house, and those ladies delivered, but now they need their own store of honey to eat from all winter long. We want them stronger than ever in the spring, and hopefully we will be able to put two more hives out on our 40 acres next spring. Hopefully next spring I can don my brand new-to-me bee suit, learn about these new bees, and maybe even collect some honey. Hopefully next spring we will have a shouse and a lake and some hives and the start of a garden. Until then though there is fall and sourdough.
